The tekagi is one of two tools, along with the cable or circuit breaker, for practising Ikejime. The SEANOX model allows this method of slaughter for most freshwater and sea fish (bass, sea bream, pike perch...) The Tegaki is used to drill a hole into the fish's skull to reach its brain and put it into a state of brain death.
What is IKEJIME
It is an ancient Japanese method of neutralising the nervous system of the live fish, before bleeding it. Ikejime shows deep respect for the fish that you choose to take, and allows you to obtain the highest possible taste quality.
