The soft-shelled clam is a very renowned shellfish in Brittany for surfcasting fishing for bass and sea bream. It is a bait that has also surprised fishers in the south of France with its effectiveness. Collected in Brittany by a shore fisherman, they are then frozen alive at a very low temperature, for optimal quality after thawing. To be used shelled, whole or in pieces and laced with thin elastic thread.
